Stud poker is different from both Texas Holdem or Omaha Hi in that it has no community or flop cards each player is dealt a mix of face-down and face-up cards, and each betting round can open with a different player as opposed to the player to the right of the dealer. The obvious difference between 5 and 7 Card Poker is the number of cards dealt, 5 or 7 and the amount of players up to 8 in 7 card poker and up to 10 in 7 card stud.
